Comments about Smith's Smiths 2-Step Knife Sharpener:

I own several of these and use them for my expensive German kitchen knives, filet knife, pocket knifes etc. The 2 step process works very well. Once I get a "shaving edge" on the blades, I use the ceramic side to touch them up. This works as well as some $60.00 sharpeners.
