        This product is Great for someone starting out. The gun is a little on the flimsy side but works fine if you take you time. the two different nozzles are handy for making both jery strips and beef sticks. The only thing I see being a problem is the plunger likes to get caught on the edge of the tube and starts to show signs of wear.
        The seasoning kits have good instructions. I would follow them on your first batch (1 lb.) then modify to your liking.

                  If the sausage has added fat I would say no, jerky should only be made from lean meats. Spicy or mild does not matter.

                  Commercially packaged jerky can be kept 12 months out of freezer.
                  Home-dried jerky can be stored 1 to 2 months out of freezer.
                  Unsalted jerky should be refrigerated and used within two weeks.
