                I have used the jerky mix for almost 10 years on beef as well as fish and it is fabulous. I debone my trout and generously sprinke the mix on both sides. Marinate overnight. Place in a smoker until done. I cool the fish, wrap in paper towels, place in a paper bag in the refrigerator. It stores well.
