    2. Stuffed 15 lbs. summer sausage in a breeze. Smoked cured turned out awesome.
    3. First time I ever-made breakfast sausage and stuffed hog casings, easy and turned out better than I could expect.
Large capacity is the only way to go.
Off subject the seasoning mixes I tried from Gander Mountain were great. Better than my personal recipes. Oh well.

I am not a newbie in any way whatsoever, I have stuffed literally thousands of pounds of sausage with different size, makes, and models of stuffers. This stuffer might be just fine for large diameter casings, but forget about trying to use it for 20-22mm casings. I had to have an assistant use both hands to try to crank the piston down, And he was having trouble with it using both hands! Plus we all know how well stuffing casings works if you do not have direct control of the stuffing speed, and feeding the casings off the stuffing horn at the correct speed. The included plastic stuffing horns are also low quality, and there were no metal horns available at the store I purchased at. After the aggravation of trying to use this stuffer, I went back to a smaller 5-pound unit to finish the 29 pounds of meat that I decided not to try and get through this stuffer after the first pound was so difficult.

I haven't had the chance to use this stuffer yet. But when it arrived I was surprized at how big it really is. It seems to be well constructed with stainless steel and carbon steel componets. Metal gears should hold up well over the years unlike some other brands that have plastic/teflon gears.

did you mix water with the meat? most recipes call for a quart of water, to 25 lbs meat.
