You can sharpen a variety of knife types with the Model 130, including chef's knives, Santoku knives, bread knives, hunting knives, fillet knives, and pocket knives. The Model 130 includes three stages: 100% diamonds, super-hardened sharpening steel, and flexible stropping disks. Stage 1 consists of rotating conical disks impregnated with 100% diamond abrasives that safely sharpen the entire edge. Stage 2 features a super-hardened miniature steel that along with precision guides develop a shaving sharp edge with ultra-sharp microscopic serrations that provide a superior "bite." Finally, Stage 3 uses a flexible abrasive disk system to create a microscopically smooth, ultra sharp fine edge. Stage 3 can be used as often as needed to keep edges polished and maintained until additional sharpening is required.
