Basil Parmesan Fillets

Serves: 2

2 Mahi-Mahi fillets (or any other white fish)
1 Clove minced garlic
1/4 tsp. basil
1/2 tsp. fresh ground black pepper
1 Tbs. butter
2 Cups freshly grated Parmesan cheese

Cover a cookie sheet with foil and put the fillets in the middle. Mix garlic, basil, and pepper. Rub with fillets with butter and then top with spice mixture. Broil for about 7 minutes. Check fillets often - cooking time varies with thickness of fillets. Fish is done when it flakes easily.
